Smoked Beef Brisket
Ingredients
Directions:
Trim up the brisket by removing all the fat from the top side of the flat (leave the fat on the bottom of the flat alone). Remove the fat from the point and between the point/flat.
Place the brisket in a large roasting pan. Mix up the brisket injection according to the directions and inject into the flat of the brisket in a 1 inch grid pattern injecting against the grain. Can inject any extra into the point if you desire but not necessary.
Season the brisket first with Zinny's Original recipe everywhere including between the flat/point except for the fat underneath the flat. Next, season with Zinny's Garlic Pepper over the top of the seasoning salt. Let brisket sit overnight or a few hours before starting to smoke the brisket.
Heat up the grill/smoker to roughly 330F and place the brisket on the grill with the fat side down. After smoking the brisket for about 2 hours (the flat temp should read around 150F) put the brisket into a roasting pan (large tin foil pan works great) along with 23 ounces of au jus prepared per packet instructions. Sprinkle some of the Zinny's Original Recipe in the au jus as well and then cover with tin foil. Place back on the grill (at this point you can use an oven if you wish) and cook for another 2 hours before checking. Check with a meat probe. The meat is done when you can stick a meat probe into the flat and feel no resistance from the meat (it will be like sticking the meat probe into soft butter). If the meat isn't done yet continue cooking and checking every half hour so until its done.
After removing the brisket from the smoker/grill keep it wrapped up and let it rest for 1-2 hours. About a half hour before eating, separate the flat and point from one another and cube up the point. Put the cubes back into the juices in the pan with the flat to make your burnt ends. When ready to eat, slice the flat perpendicular to the grain at the thickness of slice desired and enjoy!
